This recipe is inspired by our holiday in Florida. Basic recipe I took from Martha Stewart and I modified it to the more healthy direction. Recipe is easy and delicious.
2,5 dl organic flour
2 tsp baking powder
1/2 tsp salt
1 tsp organic ceylon cinnamon
2,5 dl coconut rise ”milk” from Alpro*
1 organic egg
1 tbs coconut oil
Mix all dry ingredients and separately wet ingredients and mix then everything together as a dough. Add little olive oil to the frying pan and dry extra oil with paper towel. Add big table spoon of dough to the pan and fry.
I served pancakes with fresh sweet pineapple and it was healthy and delicious breakfast.
